Sweet Potato Tacos with Roasted Cumin is a super-simple, healthy sheet pan dinner. Whole, roasted cumin seeds add an earthy note to these sweet & spicy roasted veggie tacos.
In a large bowl, toss together the diced sweet potatoes, red onion, poblano peppers, whole cumin seeds, cayenne pepper and salt.
Line two baking sheets with parchment paper. Spread the veggies out evenly on the baking sheets. Roast in the oven for 25-30 minutes, or until the sweet potato is just cooked, turning halfway through.
Scoop the veggie filling into tortillas, garnish and top with your choice of toppings and serve!
Notes
You can fit the ingredients on a single sheet pan, but they'll roast better (vs. steam) on two!If it's too hot to turn on the oven, toss everything in a grill basket and throw them on the grill until the sweet potatoes are soft. You'll probably want to toast your cumin seeds separately in a saute pan and toss them in with the veggies at the end.
